As the season shifts and the days begin to get longer, there’s often talk of renewal and fresh starts. But sometimes for caregivers, the rhythm of care continues regardless of the light outside. What can shift, however, is how gently you treat yourself within that rhythm.
A Comforting One-Pot Lentil & Vegetable Soup
This is a gentle, nourishing recipe you can return to again and again. It’s forgiving, budget-friendly, and makes enough for multiple meals. And if you don’t like lentils, simple substitute for some ground turkey!!!
Ingredients
1 cup dried lentils (rinsed)
1 carrot, chopped
1 celery stalk, chopped
1 cup diced tomatoes (canned is perfect)
4 cups vegetable or chicken broth
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Optional: handful of spinach or kale
Instructions
*Add lentils, vegetables, tomatoes, broth, and seasonings to a large pot.
*Bring to a boil, then reduce to a gentle simmer.
*Cover and cook for 25–30 minutes, until lentils are tender.
*Stir in spinach or kale at the end if using.
That’s it.
It reheats beautifully and often tastes even better the next day. You can freeze portions for future busy weeks.
Nourishment does not have to be elaborate to matter…..
It can be warm.
It can be simple.
It can be repetitive.
It can come from a slow cooker, a grocery store shortcut, or a one-pot meal made in between other responsibilities.
